Effervescence

Note the vivacity and elegance of the chain of bubbles stemming from the glass and disappearing at the surface. Their finesse is a synonym of a scrupulously elaborated Champagne which was allowed to mature for 3 years. As a rule of thumb, the finer the bubbles are, the higher the quality of Champagne. Additionally, the temperature of the bottle and the type of glass impact the number of bubbles.

Scent

One way to experience the different smells is to tilt the glass slightly to rest the nose on the edge of the glass. When the nose is close to the Champagne surface, the smells encountered will draw a strong body; with a majority of mature Pinot Noir, relatable to wild berries, oak, violet, brioche, hazelnut, roasted macadamia, almond and fig.

When the nose is slightly higher than the Champagne surface, the smells shift towards lighter citrus tones, emblematic to mature Chardonnay such as pomegranate, grapefruit, mandarin, peach, honey and vanilla. 

Taste

The bubbles slowly roll in the mouth and dissipate before finishing the sip.

The palate of our signature Champagne Grand Cru bows towards a mineral and mature character and deviates from the prevailing sacchariferous taste, familiar to most of Champagnes. It has been carefully elaborated to perfectly balance the aromas of the Pinot Noir and Chardonnay. 

The minerality of Yvonne Belhomme is part of its signature taste and is the result of a low sugar per litre and sets up for a smooth, tasty and long-lasting after taste.

Pairing

Yvonne Belhomme Champagne Grand Cru pairs well with paté, foie gras, charcuterie, white meat, goat cheese, olives, white bread and tapenade.
